Honey Curry Chicken
Ingredients:
1 medium onion, thinly sliced
8 to10 boneless chicken thighs (or preferred parts)
¾ tsp ground ginger
1 tsp salt
Freshly ground pepper to taste
¾ c. white wine
3 T butter
1 T. curry powder
4 T. honey
Procedure:
Grease bottom of baking pan. Place thinly sliced onion on the bottom of pan. Lay chicken thighs on top of onion. Mix ginger, salt and pepper and sprinkle over chicken. Pour white wine over and dot with butter. Bake at 400 degrees for 40 minutes. Cover chicken parts with curry and honey mixed together. Bake an additional 20 minutes. Serve with brown rice and a green salad for an easy meal.
